"HASSELBACKSPOTATIS" - SWEDISH HASSELBACK POTATOES
This classic way to prepare potatoes comes from a restaurant on. Djurgarden in Stockholm.These are perfect fall and winter fare for special meals, guests, Thanksgiving or Christmas OR -treat yourself to these tasty potatoes just for fun!
Ingredients
- 8 medium potatoes peeled
- 1 1/2 ounces melted butter
- 3 cloves garlic crushed (mixed with the butter)
- 1 1/2 teaspoons salt
- pepper
- 1 1/2 ounces parmesan cheese (optional)
- 2 tablespoons fresh whole wheat bread crumbs (optional)
Garnish
- finely chopped green onions (optional)
- sour cream (optional)
Instructions
- Cut the potatoes into thin slices 3/4 way through, leaving a small uncut portion of the potato. The potato will appear "fan-like."
- Put half of the butter and garlic in an oven-proof dish and place the potatoes in the dish.
- Sprinkle with salt & pepper.
- Drizzle with remaining butter and garlic.
- Bake in a 375-degree oven (takes about an hour, depending on the size of the potatoes).
- Baste occasionally with the garlic/butter.
- After 30 minutes, sprinkle with the cheese and bread crumbs - do not baste after putting on the cheese and crumbs.
- Finish baking until potatoes are done and golden.
- Sprinkle finely chopped green onions on top & serve with sour cream, if desired.
