"HASSELBACKSPOTATIS" - SWEDISH HASSELBACK POTATOES

This classic way to prepare potatoes comes from a restaurant on. Djurgarden in Stockholm.
These are perfect fall and winter fare for special meals, guests, Thanksgiving or Christmas

treat yourself to these tasty potatoes just for fun!

Ingredients
  

  • 8 medium potatoes peeled
  • 1 1/2 ounces melted butter
  • 3 cloves garlic crushed (mixed with the butter)
  • 1 1/2 teaspoons salt
  • pepper
  • 1 1/2 ounces parmesan cheese (optional)
  • 2 tablespoons fresh whole wheat bread crumbs (optional)

Garnish

  • finely chopped green onions (optional)
  • sour cream (optional)

Instructions
 

  • Cut the potatoes into thin slices 3/4 way through, leaving a small uncut portion of the potato. The potato will appear "fan-like."
  • Put half of the butter and garlic in an oven-proof dish and place the potatoes in the dish.
  • Sprinkle with salt & pepper.
  • Drizzle with remaining butter and garlic.
  • Bake in a 375-degree oven (takes about an hour, depending on the size of the pota­toes).
  • Baste occasionally with the garlic/butter.
  • After 30 minutes, sprinkle with the cheese and bread crumbs - do not baste after putting on the cheese and crumbs.
  • Finish baking until potatoes are done and golden.
  • Sprinkle finely chopped green onions on top & serve with sour cream, if desired.
